Cream Cheese Mashed Potatoes

These are some of the BEST mashed 'taters I make... my kids love them and so do the adults :) On this occasion I served them with homemade mini meatloaves. I'll be posting pictures and recipes of those soon.


Yield:
8 portions

Ingredients:

2 pounds Idaho potatoes, peeled
1 stick unsalted butter
1 cup (8 oz) cream cheese
1/2 to 1 cup warmed milk
1 Tablespoon Kosher salt
black pepper to taste

Method:

1.Boil or steam potatoes until tender.

2. Using a food mill or mixer, incorporate all ingredients and adjust
seasonings to your taste.
