Amano Chocolate Review and Giveaway
About a week ago I got an email from Amano Chocolate asking if I would like to try out and giveaway their 3 newest artisan chocolate bars. Being that I have tried and loved Amano chocolate in the past, how could I say no!?

The first we tried was the Ocumare 30% Milk Chocolate Bar. Single Bar Price: $6.95.
This bar was very smooth and rich without being too overpowering. It's got an ever so slight "fruitiness" about it that reminds me of some ripe, juicy fruit.. just a wee bit of spiciness alongside the creamy nature of this bar as well. I enjoyed it very much and would say it was my favorite of all 3 bars.

Second was the Jembrana 30% Milk Chocolate Bar. Single Bar Price: $6.95.
I found this bar to seem much sweeter that the Ocumare bar. It was smooth and rich also but there was a good bit of spice and warmth with this bar where as the Ocumare seemed almost "cool" in comparison. It was a very good, solid and enjoyable chocolate, certainly. It seemed a bit more "typical" to me. Excellent quality.. but it didn't stand out the way the Ocumare did, for me.

Last but not least was the Montanya Limited Edition 70% Dark Chocolate Bar. Single Bar Price: $8.95.
*This* bar really knocked my socks off! I love dark chocolate and this was snappy and cool and dark as the depths of Satan's soul dark. Nutty. Complex. Sharp. This, to me, is what dark chocolate *should* be. I really enjoyed this bar. Immensely. Honest cocao flavor. Only a slight hint of sweetness... and it was wonderful. Definitely a keeper.

Gnocci with Roasted Asparagus, Mushrooms and Goat Cheese
Certainly this isn't one of the prettiest dishes I've ever made, but it was absolutely delicious. The only thing I would do differently next time is make my own gnocci. I used a package of the frozen kind and wasn't too impressed. Normally I do make my own, but I was pressed for time and had never tried the frozen stuff and had always been curious. It was "okay"... certainly edible, but fresh, homemade gnocci is *so* much better and it's not hard at all to make if you have the time.
Ingredients:
1 Package frozen Gnocci (served 4, not sure of the size)
1 pound sliced baby portabella mushrooms
1 pound fresh asparagus
10 oz goat cheese (I used Ile de France Goat cheese)
Handful chopped chives
2 cloves chopped garlic
Olive Oil
Salt and Pepper
Method:
Pre-heat over to 400* F.
Set your pot filled with water to boil for the Gnocci.
Clean and cut asparagus into 1 inch segments, place on a baking sheet and drizzle with olive oil. Roast in a 400* F oven for about 10-15 minutes until tender.
While the asparagus is roasting, saute the sliced mushrooms and garlic in a skillet until tender.
Prepare Gnocci according to package directions.
Once all your ingredients are finished, combine the gnocci, mushrooms and asparagus in a large bowl and crumble the goat cheese over the top. The heat should melt the cheese into a thick, creamy and decadent sauce. Toss gently with chives, and add salt and pepper to taste. As a finishing touch, I like to drizzle a bit of the olive oil that was left on the baking sheet from roasting the asparagus over the dish... yummy!

Super Simple Black Beans and Rice
I don't always have the time I'd like to spend in the kitchen. I'm a busy Mom of 3 kids and work at home as well. So, I use short cuts in the kitchen from time to time. As much as I'd like to be able to make everything I feed my family from scratch, sometimes it's not just in the cards. This is one of those last-minute, weeknight doable recipes for when you want something that tastes great but is fast to the table.
Ingredients:
1 Package Yellow Rice Mix (I use Goya brand)
1 Large can Black Beans (I use Goya brand)
1 can Chopped Tomatoes w/green chilies (I use RoTel brand)
1 teaspoon cumin
3 cloves garlic minced
1 small finely chopped onion
1 Tablespoon olive oil
Handful of chopped cilantro
Method:
Make rice according to package directions. Time it so that your rice will be done just as your beans are finishing.
Saute the onions and garlic in olive oil until softened. Add in drained black beans, chopped tomatoes and the cumin and heat throughly. Combine prepared yellow rice with bean/tomato mixture. Mix in the chopped cilantro. Serve immediately.
Makes 2-3 main dish servings or up to 6 side dish servings

Puerto Rican Style Shredded Pork
As a child my Mother had a good friend that came from Puerto Rico. Every so often she would come and stay at our house and would make some of the most amazing meals... things she grew up eating. This pork recipe is one of hers and I've made it for years in just the way she taught me. It's delicious, tender and extremely flavorful. Usually when I make it, I make a large amount and the first time we eat it with tortillas and sour cream. The leftovers are then used in tamales, empanadas or enchiladas. I've also used this pork in sandwiches and to make a casserole with rice and beans. It's great with eggs too. Being that it's a cheaper cut of pork, it's rather economical as well. I suggest you think of this as a "make ahead" dish... the meat needs to roast for a long time and you'll need to cool it before trying to shred it. It's even better served the next day! Enjoy!
Ingredients:
8 lbs pork shoulder
10 cloves minced garlic
1 teaspoon dried oregano (double the amount if using fresh)
4 packets Sazon Goya (reserve 2 for after cooking)
1 tablespoon Goya Adobo seasoning
Freshly ground pepper
2 tablespoon olive oil
Method:
Pre-heat oven to 350* degrees.
In a small bowl, combine olive oil, garlic, oregano, 2 packets of Sazon, Adobo and pepper. Mix well and set aside.
With a sharp knife, carefully make deep slits into the pork roast. The more slits you make, the deeper the flavor will penetrate the meat. Place the roast into a deep roasting pan (depending on how fatty your shoulder is, there could be a lot of liquid rendered) Rub the roast with the oil and seasoning mixture, making sure to get plenty of the mix inside the slits.
Roast the shoulder, uncovered, in a 350* oven for approximately 6 hours. You want the meat completely tender and falling off the bone.
Remove the meat from the pan and pour the rendered liquid (once cooled) into a container and refrigerate until the fat solidifies and can be removed from the remaining liquid. Reserve de-fatted liquid.
Once the meat has cooled enough to handle, remove it from the bones and shred using two forks. Add in 2 more packets of Sazon and enough of the reserved cooking liquid to moisten well. Combine throughly. Reheat, covered. Serve.
Serves 8-12
Kitchen Notes:
The Sazon Goya and Goya Adobo can be found in most grocery stores these days, but Amazon.com also sells it as well as any Latin/Mexican grocer. Here is a photo, so you'll know what you're looking for, if you are not familiar.

Mother's Day Giveaway Bonanza: Day 1
Mother's day soon approaches and I wanted to find a way to say thank you to the amazing Moms out there. I wish I could send a gift to every one of them, but since that's not possible I'm doing the next best thing...
