Pizza Caprese with Prosciutto

A little pizza dough, some fresh tomato, some fresh mozzarella, a few leaves of fresh basil and some prosciutto... a drizzle of olive oil and a rubbing of garlic and you've got one of the best pizzas known to man. Simple, honest and delicious food. I love to serve this pizza with salads to make a rounded out meal. Yum! Perfect summer food!

Pizza Caprese with Prosciutto

Ingredients:
1 ready or homemade pie crust, par baked.
1 good drizzle of olive oil
Split clove of garlic for rubbing
2-3 thinly sliced plum tomatoes
8 oz fresh mozzarella sliced
4 oz prosciutto
large handful fresh basil leaves

Method:
Par bake your crust until it's nearly finished according to your recipe or package directions. Remove from the oven and drizzle generously with extra virgin olive oil. Rub the surface of the crust with the cut garlic to impart a mild garlic flavor. Begin to layer toppings starting with basil. Move on to prosciutto, tomato and mozzarella... layering as you go. Finish with a layer of mozzarella.

Return pizza to the oven to finish off baking until the cheese is melted and bubbling and the tomatoes are starting to shrivel. Slice and eat! Enjoy!
