Healthy Simple Spinach and Cauliflower Soup

It's that time of year... the holidays are over and so is all the indulgence and excess. This morning I started my day with a smoothie and I made up a big batch of this simple, good for you soup. It is completely vegetarian and uses only 6 ingredients, 8 if you count the salt and pepper. I make quite a few different versions of this basic soup recipe... switching up whatever vegetables I have on hand, what is in season or what I have a craving for. I treat this soup like a starter course or a snack. I usually start my meal with a nice big bowl of soup along with a huge salad.... this helps fill me up and is delicious as well as being good for you. I like doing this because then I can still have whatever main course I want, but since I am already partially full, I tend to make better choices and eat smaller portions. For me, it works.

In the new year, you will see a few changes here on my blog. The biggest being the absence of any kind of advertising. I've decided to go back to blogging solely for myself and you! There will be no more sponsored posts, no more reviews (unless it's a product I have decided I adore and want to tell you about) and the giveaways will be minimal since any giveaways I do will be out of my own pocket. Hopefully this makes a more pleasurable experience for you and I hope to build the interaction with my readers so that this blog becomes a true resource for your recipe needs.

Healthy Simple Spinach and Cauliflower Soup
Ingredients:
2 Tablespoons olive oil
1 large onion, chopped
1 Large head of cauliflower, cleaned and trimmed into florets
6 cups vegetable stock
10 ounces raw spinach
1 teaspoon red pepper flakes
Salt and pepper to taste

Method:
1: In a heavy bottomed pot, heat olive oil over medium heat.

2: Add chopped onion to oil and sauté until softened and slightly browned.

3: Add the cauliflower pieces and sauté until slightly browned. This adds a really nice flavor, but isn’t necessary.

4: Add the vegetable stock to the pot and bring to a low simmer. Cover the pot.  Simmer gently until the cauliflower is tender.  About 20 minutes.

5: Once the cauliflower is tender, remove from heat and immediately add the spinach leaves. Stir well and allow the hot broth to wilt the spinach for 10 minutes.

6: Add red pepper flakes.

7: Use a stick blender to puree soup into a thick, smooth consistency. You can also use a blender to carefully puree the soup in batches.

8: Taste and correct seasoning with salt and pepper to your liking.

9: If you like your soup thinner, feel free to add more vegetable stock after you’ve pureed.

Makes 6 Large servings.
